Greek Salad

  • 2 cups romaine lettuce, chopped
  • 4 whole tomatoes, cut into wedges
  • 1 whole cucumber, sliced
  • 1 bell pepper, seeded and sliced
  • 1 small onion, sliced
  • 1 4.25oz can chopped black olives
  • 6 tbsp olive oil
  • 1 tsp red wine vinegar
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp dried dill weed
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • 3/4 cup feta cheese, crumbled
  1. Mix the lettuce, tomatoes, cucumber, onion, bell pepper, and olives together in a large bowl.
  2. In a small bowl, whisk together olive oil, vinegar, herbs, and lemon juice until emulsified. Season with salt and pepper to taste
  3. Drizzle dressing over the salad.
  4. Sprinkle with cheese.

Potato Leek Soup

  • 2 tbsp butter
  • 2 large leeks, chopped and washed
  • 4 cups chicken or veggie stock
  • 12oz peeled and diced golden potatoes
  • 1 tsp ground nutmeg
  • 1 tbsp dill weed
  • 1 bay leaf
  • 3/4 cup heavy cream
  1. In a preheated medium sized pot, melt the butter.
  2. Add the leeks and cook until softened and starting to brown.
  3. Add the stock, potatoes, bay leaf, nutmeg, and dill. Bring to a simmer and cook for about 10 minutes. Or until the potatoes are cooked through.
  4. Turn off the heat and remove the bay leaf
  5. With an immersion blender, blend until it reaches desired consistency.
  6. Stir in heavy cream. Season to taste with salt and pepper.

Classic BLT

  • 2 slices of sourdough bread
  • 4 slices of thick cut bacon
  • 1 medium tomato, sliced
  • 1 handfull of shredded iceburg lettuce
  • 1 tablespoon of mayo
  1. Place the tomato splices on a small plate and lightly season with salt and pepper. Set aside.
  2. Line a baking sheet with parchment paper and place bacon on the sheet.
  3. Put bacon in the oven and set to 425F (start with a cold oven and let the bacon heat up with the oven).
  4. Once oven comes to temperature, bake for an aditional 10-15 minutes or until it is to your liking.
  5. Place bacon on a paper towel lined plate to drain. Drain bacon grease from baking sheet into a bowl. Keep bacon in the turned off oven to keep warm during the next steps.
  6. Spread some of the bacon grease onto the sliced bread.
  7. On a pre-heated pan, fry the bread till desired crispiness.
  8. Spread mayo onto fried bread. Put bacon, lettuce, and seasoned tomato together between the bread.
