Banana Pancakes
(Serves 4)

- 1 cup flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1 tsp salt
- 1 cup whole milk
- 1 egg
- 2 very ripe bananas, mashed
- 2-4 tbsp of butter
- In a large bowl, mix flour, sugar, baking powder, and salt.
- Whisk milk, egg, and bananas together in a small bowl.
- Add wet ingredients to the dry and mix until just combined. Don't overmix.
- Melt 1 tbsp of butter to a preheated frying pan.
- Scoop 1/4 cups of batter into pan. Cook until bubbles form on top,
flip and continue frying until the bottom is browned.
- Repeat with remaining butter and batter.
Smoked Salmon Quiche
(Serves 6)

- 1-3/4 cups flour
- 1 cup butter
- 1/3 cup ice water
- 1 tbsp olive oil
- 1/2 an onion, diced
- 14oz smoked salmon, chopped
- 2 tsp fresh chives, chopped
- 1 clove garlic, minced
- 2 tsp fresh basil, chopped
- 5 whole eggs
- 1 cup milk
- 1 cup heavy cream
- 1 tsp salt
- 1 tsp pepper
- Preheat the oven to 400F.
- Add flour and butter to a food processor and blend till it has the consistency of wet sand.
- With the food processor on low, slowly add the ice water until a ball of dough forms. (It might not
require all of the water).
- Cover dough with plastic wrap and chill for 1 hour.
- Heat olive oil in a skillet till shimmering. Add onion and cook until starting to brown.
- Add in the salmon, chives, garlic, and basil. Cook for 30 seconds. Set aside and let cool.
- Roll dough flat to a diameter of about 10". Lay into a tart pan and press into edges. Dock with a fork.
- Cover dough with crickled up parchment and cover with baking weights.
- Blind bake crust for about 10 minutes. Let cool.
- Reduce oven temperature to 325F
- Place the filling onto the crust and flatten out with a spatula.
- Whisk the eggs, milk, and cream together. Mix in salt and pepper.
- Pour over the filled tart pan and shake till top is level.
- Bake for 30 minutes or until top is puffed and golden.
Banana Strawberry Parfait
(Serves 4)

- 2 cups of honey nut granola
- 2 cups of pain Greek yogurt
- 1/4 cup of sliced almonds
- 2 large bananas, sliced
- 1 cup of strawberries, sliced
- In a 12oz drinking glass put 1/4 cup of yogurt on the bottom.
- Follow with a layer of 1/4 cup of the granola
- Follow that with a 3-4 slices of banana and strawberry
- Repeat 1 more time
- Top with sliced almonds
