Banana Pancakes
(Serves 4)

  • 1 cup flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup whole milk
  • 1 egg
  • 2 very ripe bananas, mashed
  • 2-4 tbsp of butter
  1. In a large bowl, mix flour, sugar, baking powder, and salt.
  2. Whisk milk, egg, and bananas together in a small bowl.
  3. Add wet ingredients to the dry and mix until just combined. Don't overmix.
  4. Melt 1 tbsp of butter to a preheated frying pan.
  5. Scoop 1/4 cups of batter into pan. Cook until bubbles form on top, flip and continue frying until the bottom is browned.
  6. Repeat with remaining butter and batter.

Smoked Salmon Quiche
(Serves 6)

  • 1-3/4 cups flour
  • 1 cup butter
  • 1/3 cup ice water
  • 1 tbsp olive oil
  • 1/2 an onion, diced
  • 14oz smoked salmon, chopped
  • 2 tsp fresh chives, chopped
  • 1 clove garlic, minced
  • 2 tsp fresh basil, chopped
  • 5 whole eggs
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tsp salt
  • 1 tsp pepper
  1. Preheat the oven to 400F.
  2. Add flour and butter to a food processor and blend till it has the consistency of wet sand.
  3. With the food processor on low, slowly add the ice water until a ball of dough forms. (It might not require all of the water).
  4. Cover dough with plastic wrap and chill for 1 hour.
  5. Heat olive oil in a skillet till shimmering. Add onion and cook until starting to brown.
  6. Add in the salmon, chives, garlic, and basil. Cook for 30 seconds. Set aside and let cool.
  7. Roll dough flat to a diameter of about 10". Lay into a tart pan and press into edges. Dock with a fork.
  8. Cover dough with crickled up parchment and cover with baking weights.
  9. Blind bake crust for about 10 minutes. Let cool.
  10. Reduce oven temperature to 325F
  11. Place the filling onto the crust and flatten out with a spatula.
  12. Whisk the eggs, milk, and cream together. Mix in salt and pepper.
  13. Pour over the filled tart pan and shake till top is level.
  14. Bake for 30 minutes or until top is puffed and golden.

Banana Strawberry Parfait
(Serves 4)

  • 2 cups of honey nut granola
  • 2 cups of pain Greek yogurt
  • 1/4 cup of sliced almonds
  • 2 large bananas, sliced
  • 1 cup of strawberries, sliced
  1. In a 12oz drinking glass put 1/4 cup of yogurt on the bottom.
  2. Follow with a layer of 1/4 cup of the granola
  3. Follow that with a 3-4 slices of banana and strawberry
  4. Repeat 1 more time
  5. Top with sliced almonds
